Last week my whole house was down for the count with the flu. It was brutal. But one thing that kept us going when we couldn’t stomach solid food was a nice, hot chicken broth. We usually like chicken soup while sick, but even that was too much to deal with during the worst of it, so broth it was. Served in a mug, it can be drunk like a cup of hot tea, making it much easier for a sick person to manage.
Putting it together is simple, and only takes a few ingredients –
- 1 cup of hot chicken broth (home made is best, but store bought will do)
- 1 small carrot, grated
- 1 green onion, minced
- 2-3 cloves of garlic, minced
- salt and pepper to taste
- fresh ginger, grated to taste (optional)
Mix all of the ingredients above and heat until warmed thoroughly. Serve in a large mug.
